Spinach and Chicken Bake​​

Serves: 2

-2 chicken breasts, thinly sliced
-2 cups baby spinach 
-1/4 cup fat free mozzarella cheese 
-1/4 onion, sliced
-2 tsp olive oil
-1/2 teaspoon provincal spices (mixture of oregano, thyme, savory, marjoram) (available at

1. Preheat oven to 400.
2. In a medium baking dish, layer onions on the bottom of the dish, then top with the chicken slices in a single layer.  Drizzle with olive oil and  Herbs de Provence.  
3. Roast for 18 minutes.  Remove dish from oven, and top with baby spinach and mozzarella.
4. Return to oven for 8-10 minutes.
