homemade blackbean pumpkin chili

Black Bean Pumpkin Chili

Serves: 10

-2 tablespoons olive oil
-1 medium onion, chopped
-1 medium sweet yellow pepper, chopped
-3 garlic cloves, minced
-2 cans (15 ounces each) black beans, low sodium, rinsed and drained
-1 can (15 ounces) pumpkin
-1 can (14-1/2 ounces) diced tomatoes, undrained
-3 cups chicken broth, low sodium
-2-1/2 cups cubed cooked turkey
-2 teaspoons dried parsley flakes
-2 teaspoons chili powder
-1-1/2 teaspoons ground cumin
-1-1/2 teaspoons dried oregano
-1/2 teaspoon salt

1. In a large skillet, heat oil over medium-high heat. Add onion and pepper; cook and stir until tender.
2. Add garlic; cook 1 minute longer.
3. Transfer to a 5-qt. slow cooker; stir in the next 10 ingredients.
4. Cook, covered, on low 4-5 hours.
